Ingredients
  

Mini Meatloaf

  • 1 pound ground beef 80/20 recommended
  • ½ cup breadcrumbs plain or Italian-style
  • ¼ cup milk
  • 1 egg lightly beaten
  • ¼ cup onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp ketchup plus more for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup shredded cheese optional, for stuffing or topping

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine breadcrumbs and milk. Let it soak for a few minutes.
  • Add ground beef, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Gently mix until just combined.
  • Shape the mixture into 4–6 mini loaves. Place them evenly on the baking sheet.
  • Top each loaf with a spoonful of ketchup or your preferred glaze.
  • Bake for 25–30 minutes, or until the internal temperature reaches 160°F (71°C).
  • Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, try mixing ketchup with a little brown sugar and mustard for the glaze. These mini meatloaves also freeze well, so make a double batch for later!
